Death By Chocolate


I wasn't going to post this recipe (call me greedy), but then I decided that the world has to know about these brownies. This was a recipe passed on to me from a friend, after I'd eaten have a dozen of them on the 4th of July. It's one of the easiest indulgences to make. These are mint brownies, with only two store-bought ingredients. Normally I like to make everything from scratch. It's usually healthier and it usually tastes better. But, these, my friend, these are the ultimate exception.

"Easy Peasy" Mint Brownies:
1 box brownie mix
1 box Andes mints

Cook brownies according to directions on packaging. While brownies are baking, unwrap Andes mints from their individual wrappers. When brownies are finished baking, take them out of the oven and place Andes mints in a layer on top. Place brownies back into the oven for about a minute, just until the Andes mints start to melt. Take the brownies back out of the oven and spread the Andes mints with a knife to glaze the brownies. Let cool completely. I like to put mine in the refrigerator to chill and harden the glaze. There is nothing better than a cold, minty brownie! Enjoy!

  8. NOTE: Andes Mints are sometimes hard to find at your neighborhood grocery store, but the drugstore will have them! :)
